Back in the early 90’s we journeyed from the North of Italy all the way to the South tasting literally hundreds of espressos from the most famous coffee bars of Italy. Just like culinary tastes, espresso preference also change from region to region. In Northern Italy we experienced the lightest roasted espresso blends, and in the Southern regions we found the darkest espressos. In Rome, medium roasts are preferred. We think a fine, medium roast applied to full bodied, excellent beans produces the best espresso. This is enough roasting to fully develop all of the natural acids and oils so that they will produce a red, syrupy crema. This roast also develops the sugars into a caramel richness without any burnt or dark flavor. Urth Italia is our Roman style blend producing a syrup red crema, roasted hazelnut, chestnut, apricot and spice, and a long finish.
