Oolong tea has been oxidized between the colors of green and black tea. They can have a unique, floral spiciness, and a clear to amber-green liquor. Oolongs can be re-brewed repeatedly 3 to 4 times, with each steeping revealing subtle nuances and exquisite hidden flavors under each layer. To brew bring water to 180 degrees or as a Chinese tea apostle called it “Crystal beads” (long bubble strings coming up from the bottom of the kettle) and steep for 2 to 3 minutes each time.
